About
The research project aims to improve the use of hollow fiber membrane filtration in fruit juice processing to improve product quality, stability, and nutritional value. A variety of fruit juices will be tested to assess the effectiveness of hollow fiber membrane filtration across different types. The filtration system will be established using suitable hollow fiber membranes with different pore sizes and configurations, based on compatibility, efficiency, and permeability characteristics. Operating parameters will be optimized to achieve clarification, microbial control, and preservation of flavor and nutrients. Techniques such as spectrophotometry, chromatography, microbial enumeration, enzyme assays, and antioxidant activity assays will be used to understand changes during filtration. Accelerated shelf stability tests will be performed to monitor changes in quality attributes and oxidative stability over time. sensory evaluations will be conducted to evaluate the effect of hollow fiber membrane filtration on taste, aroma, mouthfeel, and overall consumer approval. The economic viability and scalability of adopting hollow fiber membrane filtration in fruit juice processing plants will also be assessed.
