Bioaccessibility of minerals and b-carotene is enhances in the buns, The retention of b- carotene on processing and stability on storage was satisfactory. The quality of buns was found to be acceptable, The process know-how of the buns has a practical application in the production of micronutrient-rich buns which serves as one of the national strategies of using a sustainable food-based approach for alleviation of existing multi- micronutrient deficiencies.
