Project Overview

The study aims to optimize and characterize beverages made from minor millets, specifically kodo and little millets, and evaluate their nutritionally important bioactive compounds and ions for their potential role in human health, particularly women's health. The proposed scientific interventions include pre-treatments using various methods, extraction techniques, and the addition of additives like hydrocolloids, emulsifiers, and stabilizers. The study also explores the suitability of homogenization, pasteurization, and sterilization of the developed beverage.

The methodology includes optimization of extraction conditions, sensory analysis, and evaluation of proximate, physico-chemical, and bio-functional attributes. The study also includes a comprehensive elemental profiling of the developed and digested in-vitro product. The goal is to estimate shelf life, cost, and consumer acceptability of the developed beverages. The study aims to develop a process protocol for the development of beverages from kodo and little millets, and to develop organoleptically accepted beverages that show women-centric health benefits. The study also aims to study pathways related to women's health to determine if the developed beverages will show positive health benefits for women.
