Project Overview
Millet, a popular food source with nutritional benefits and complex carbohydrates, is being explored for low-sugar protein-based beverages and healthy snack bars. The project aims to optimize millet-based foods, characterize and store stability, and compare nutrient bioavailability and bioaccessibility. It will also demonstrate technology to entrepreneurs, SHGs, and FPOs. The project will also raise awareness, promote the development of millet-based food products, and promote their popularization through SHGs, industries, and institutions. Deliverables include standardized process conditions, nutritional properties, shelf life studies, and promotion.
