Buckwheat is the traditional food crop of high altitude region that rich in nutrition and gluten free in nature.Product and process technology has been developed for value addition of buckwheat into other products such as instant rice, breakfast flakes, noodles and ready to drink beverages. Value added Buckwheat Products of High Altitude Region are dveloped for management of the celiac disease.
